Yay for warmer days and delicious food… Time to whip out a delicious summer salad recipe to entertain friends and family for a delicious lunch. This is also a great salad to serve at a braai or light dinner. Grapefruit is a fruit that is in season in South Africa during the Spring season. These fruits are low in calories but are full of nutrients and an excellent source of vitamins A and C.
The colour of grapefruits may vary in colour, ranging from red to pink or even yellow. They are totally pretty when cut and added to dished such as summer salads.
Fennel and Grapefruit summer salad recipe
Salad ingredients
- 1 Fennel Bulb (cut into thin slivers with a mandolin)
- 1 Grapefruit de-skinned and cut into thin disks
- 1 cup of shredded red cabbage
- 1 Avocado peeled and cut
- 1 Handful of small mint leaves
- Naartjie segments
Mix all of the items together in a pretty bowl.
Salad dressing ingredients
- Half a cup of extra virgin olive oil
- 2 teaspoons of honey
- 1/4 cup apple cider vinegar
- Salt & pepper
Whisk all the ingredients together in a glass measuring bowl or jar and pour over the summer salad or serve in smaller pourers so that your guests can pour it themselves.
