This Biltong and Cheese savoury muffin recipe is easy to prepare, make a batch in under half an hour to spoil some guests or just yourself. Biltong is a delicacy here in South Africa.
What is biltong?
Biltong is a form of dried, cured meat that originated in Botswana, South Africa, Zimbabwe and Namibia. Various types of meat are used to produce it, ranging from beef and game meats to fillets of meat cut into strips following the grain of the muscle, or flat pieces sliced across the grain. It is related to beef jerky in that they are both spiced, dried meats; however, the typical ingredients, taste and production processes may differ. (Source)
Biltong and Cheese savoury muffin recipe
Ingredients
Method
Preheat the oven to 180 degrees Celsius.
Mix the yoghurt, eggs and buttermilk together in a large bowl.
Add the biltong and grated cheese and mix well.
Add the seeds and mix well.
Add the coconut flour, baking powder and salt and mix well.
Let the mixture sit for 5 minutes (you will notice the mixture will thicken).
Spoon the mixture into a greased/lined muffin tin.
Bake for 18 minutes until golden brown.

Serve these delicious savoury muffins with some cream cheese or butter. These cheese and biltong muffins also great as a lunch box snack for the little ones.
