We made use of Stephanie’s gorgeous artisan chocolate creations with the Scandinavian Christmas shoot last year. In this last year she has competed in some international chocolate competitions. JackRabbit was very proud to be awarded Gold in the 2017 European Open Category of the International Chocolate Awards, a Silver in the 2017 World Finals of the International Chocolate Awards in London and was honoured to represent South Africa in the 2018 Valrhona C3 Competition in Paris.

I interviewed Stephanie to find out more about her lovilee company.
How did your love for chocolate start?
Since being little, I’ve loved playing chef, whether making mudcakes in the garden or helping my mother with scones in the kitchen. There’s always been an attraction for me to the alchemy of making sensational food and imitating the skill I saw displayed by my mother. I’m also a lover of delicious desserts, but my real fascination and exploration of chocolate began a little by accident. I was searching for a technical challenge in the kitchen and was simultenously a little tired with the chocolate I could buy off the shelf. Someone told me, “Try working with it!” and that advice was right on the nail.
Tell us more about yourself and chocolatier journey?
I’m essentially self-taught, which really is the amazing power of the information age; that I could connect with top chocolatiers and chef schools across the globe who’ve made so much of their exceptional practical knowledge available online for all. Across the past half decade too, contacts have opened their kitchens to me and patiently taught me all they can and friends as family have extended helping hands and tastebuds often – I am so grateful.
For the rest, I’ve worked hard to hone my skills, learnt from (many of) my mistakes, experimented, designed, travelled, tasted and dreamed. Over the past two years things have begun to grow quickly for JackRabbit, from small scale batches and producing for special events mostly through word-of-mouth, to now having quite a large and steady order book and a more established public and online presence.
As children, my siblings and I loved watching nature documentaries often. So naming my business something with an animal association appealed to me. The name and imagery for JackRabbit sprang into being from a wonderful coincidence of brainstorming ideas at the same time as a friend published some beautiful sketches of rabbits running in a circle, on her Instagram account. I was charmed by the image’s simplicity and naturalness. We got in touch and she helped me design the branding concept.
What has been your favourite project to make to date?
I’ve really enjoyed the creative process preparing for the Valrhona C3 competition this year, which took months of planning and figuring out whether we could turn an idea into a plateable and palatable dessert. It involved 3D printing, experimenting with temperature treatments for moulds, design taste profiles, sourcing in season ingredients in far away places, convincing people to ship an individual bag of citrus across the EU and plenty of testing. Big thanks to the many friends who popped in for a taste and to provide some constructive feedback and words of encouragement. The competition itself was an opportunity to meet and see some of the most talented global chocolatiers at work in the heart of beautiful Versailles.
How do you manage to not eat all of your creations yourself?
I must admit it’s difficult, and I’m not one for unnecessarily restricting myself…. Honestly though, I love chocolate and being in the kitchen, but making them changes the taste-experience from a pure pleasure to a technical experience; I’m making notes on what works and what doesn’t, and how it could be changed or improved. And in that context I’m usually quite critical and keen to get back in the lab to start a new batch.

My mom is absolutely the best, from a little girl, she has supported, encouraged everything I tried. Never discouraged me. She supported me and lifted me up when I was down. She is my Rock, my pillar and my strength.
