Whether baked, grilled, fried, or served creamy, polenta is simply a delicious gluten free addition to your menu. Polenta has its origins in Italy and is basically a very versatile form of corn meal.
Lemon Almond Polenta Cake, a Gluten Free Cake Recipe
Ingredients
Method
Beat butter and sugar together until pale and light.
Add vanilla and beat well.
Add ground almonds and stir well.
Beat in eggs one at a time.
Fold in lemon zest, lemon juice, polenta and baking powder.
Butter and flour a 30cm tin.
Spoon the mixture into the tin and bake at 60 degrees for an hour or until cooked through.
