Gooseberry Jam Recipe – A jam recipe is something every lady should try at least once in their lives, but be warned…. Preparation is key! Make sure that you have enough preserve jars on hand before starting the process. You can either make use of previously used jars for this or purchase them from most food retail outlets or the Consol Glass retail outlets in Woodmead, Johannesburg or Stellenbosch.

What is a Gooseberry?
A Gooseberry is a round yellowish-green or reddish edible berry with a thin translucent skin. They are available from most food stores or green grocers but only seasonally. These small berries offer big nutrients and fibre and are low in both calories and fat. They are also contain a range of vitamins.

Ingredients
500 g Cape Gooseberries (washed)
1 Lemon Juiced
500 g White Sugar
2 Jam Jars Sterilised (Place 5-10cm of water in the jar and place in microwave or hot oven for 10 minutes)
Method
1Put the gooseberries, sugar and lemon juice in a large bowl and mix well. Let stand over night.
2The next day transfer all the ingredients into a large pot and gently bring to the boil until the sugar has dissolved.
3Boil rapidly while stirring (as to avoid burning) for 45 minutes or until set has been reached (dip a wooden spoon into the jam and run your finger down the back of a spoon. Set is reached if the line made by your finger remains).
4Pour into Consol preserve jars and seal.
