Lemon Almond Polenta Cake, a Gluten Free Cake Recipe

Ingredients
450 g Butter (softened)
450 g Castor Sugar
450 g Ground Almonds
2 tsp Vanilla Essence
6 Eggs
Zest of 4 Lemons
Juice of 1 lemon
225 g Polenta
1.50 tsp Baking Powder
Method
1Beat butter and sugar together until pale and light.
2Add vanilla and beat well.
3Add ground almonds and stir well.
4Beat in eggs one at a time.
5Fold in lemon zest, lemon juice, polenta and baking powder.
6Butter and flour a 30cm tin.
7Spoon the mixture into the tin and bake at 60 degrees for an hour or until cooked through.
